We always source our produce locally, from small-scale organic farmers that take care of the soil and the land as much as their vegetables – true environmental stewards. We believe that the way we eat should be replenishing our natural resources, not depleting them, and we source from farmers that are actively practicing that philosophy. We use techniques and recipes that require a minimum of complicated ingredients that are difficult to source regionally or seasonally. Even our salt is artisanally made on the Oregon coast!
